Ingredients

  • 12-15 Medjool or zamli dates (look for whole dates with that rich, caramel-like flavour)
  • Β½ cup creamy peanut butter (natural peanut butter, cashew butter, or almond butter)
  • β…“ cup chopped peanuts
  • 1 cup dark chocolate chips or try milk chocolate or white chocolate–the type of chocolate is up to you
  • 1 tsp coconut oil
  • Sprinkle of flaky sea salt

Instructions

  1. Slice each sweet Medjool date lengthwise with a sharp knife and remove the pit. Arrange them in a single layer on a parchment-lined baking sheet (or use wax paper or a piece of parchment paper).
  2. I like to place a layer of baking paper over the dates and press them down to make sure they are all stuck together firmly. (see image below)
  3. Add a layer of creamy peanut butter (or your chosen type of nut butter) over each date. Smooth it out so it covers the date layer evenly.
  4. Sprinkle chopped peanuts or even sunflower seeds on top of the peanut butter layer for that signature chewy texture and nutty flavours. Or use crunchy peanut butter instead.
  5. In a microwave-safe bowl, combine the dark chocolate chips with coconut oil. Heat in short intervals (15–20 second increments) until smooth, stirring each time. (You can also use a double boiler and hot water for a slower melt.)
  6. Pour or spoon the melted chocolate over the dates until fully coated. Smooth out the top of the chocolate layer with the back of the spoon.
  7. Before the chocolate sets, add a sprinkle of peanuts and flaky sea salt to balance the sweetness of the dates.
  8. Place the snickers date bark in the fridge for 15–20 minutes until the chocolate hardens. Cut into smaller pieces if you like.
  9. Store leftovers in an airtight container at room temperature (or the fridge) for a quick energy boost anytime.

  • 1 dash flakey sea salt

  • 1 jug for melting chocolate
  • 1 measuring cups

Method
