Snickers Date Bark

If you’re looking for a healthier alternative to a Snickers candy bar, these Date Snickers Bars are about to become your new favourite.

Ingredients
  

  • 12-15 Pitted Dates medjool or zamli are best
  • 1/2 cup natural peanut butter I use crunchy
  • 1/3 cup chopped peanuts
  • 1 cup dark chocolate
  • 1 tsp coconut oil for melting chocolate
  • 1 dash flakey sea salt

Equipment

  • 1 piece of baking paper
  • 1 jug for melting chocolate
  • 1 measuring cups

Method
 

  1. Slice each sweet date lengthwise with a sharp knife and remove the pit
  2. Arrange them in a single layer on a parchment-lined baking sheet
  3. Add a layer of creamy peanut butter over the dates and smooth it out so it covers the date layer evenly
  4. If you're not using crunchy peanut butter, sprinkle chopped peanuts on top of the peanut butter layer for that signature chewy texture and nutty flavours
  5. In a microwave-safe bowl, combine the dark chocolate chips with coconut oil
  6. Heat in short intervals (15–20 second increments) until smooth, stirring each time
  7. Pour or spoon the melted chocolate over the dates until fully coated
  8. Smooth out the top of the chocolate layer with the back of the spoon
  9. Before the chocolate sets, add a sprinkle of flaky sea salt and chopped peanuts to the top
  10. Place the tray in the fridge for 15–20 minutes until the chocolate hardens
  11. Cut into smaller pieces if you like
