Ingredients

  • 2 cups rolled oats
  • ½ cup chopped pecans (plus 12 whole pecans for topping)
  • 5 dates (soaked in boiling water until soft)
  • ½ cup peanut butter (cashew and almond also work!)
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp coconut oil (for melting with the chocolate)
  • Dark chocolate (for drizzling – or swap for white chocolate if you prefer)

Instructions

  1. Prepare your dates by soaking them in boiling water for about 10 minutes until soft.
  2. Make the pecan mixture by adding the oats, chopped pecans, nut butter, maple syrup, and vanilla extract to mixing bowl.
  3. Drain the dates well and blend together in a food processor.
  4. Add the dates to the mixture and combine well until a sticky dough forms. If it feels too dry, add a tiny extra splash of maple syrup or water.
  5. Shape into balls by scooping about a tablespoon at a time and roll into equal sized balls. Place on a baking tray with parchment paper or wax paper. Or a wooden board if you are presenting them like mine.
  6. Melt your dark chocolate and coconut oil together using a double boiler or in the microwave in short bursts at medium heat. Drizzle over the balls.
  7. Decorate each ball with a whole pecan before the chocolate sets.
  8. Refrigerate for 20–30 minutes so they firm up.
  9. Once the chocolate is set, transfer to a safe container or airtight container. Keep at room temperature for a few days or refrigerate for up to a week.

  • 5 whole dates medjool or zamli
  • 8 squares dark chocolate
  • 1 tsp coconut oil for melting

Equipment

  • 1 Mixing bowl
  • 1 measuring cups
  • 1 food processor
  • 1 jug/bowl for boiling water and melting chocolate

Method
 

  1. Prepare your dates first. Soak them in boiling water for about 10 minutes until soft
  2. Add the oats, chopped pecans, nut butter, maple syrup, and vanilla extract to a mixing bowl
  3. Drain the dates well and blend in the food processor
  4. Add the dates to the mixture and combine until a sticky dough forms
  5. If it feels too dry, add a tiny extra splash of maple syrup or water
  6. Scoop about a tablespoon at a time and roll into equal sized balls
  7. Place on a baking tray lined with parchment paper or wax paper or a wooden board if you are presenting them in a special way
  8. Melt your dark chocolate and coconut oil together using a double boiler or in the microwave in short bursts at medium heat
  9. Drizzle over the balls and add a pecan to the top of each ball for decoration
  10. Set in the fridge for about 30 minutes
