This no bake rocky road is made with simple ingredients, it comes together in one bowl, and is a perfect recipe to make with kids.

You don’t need any fancy equipment or oven, just a heatproof bowl, some good quality chocolate, and a handful of your favourite mix-ins like mini marshmallows, digestive biscuits, and crunchy Malteasers.

Ingredients

  • 10 digestive biscuits, broken into small pieces
  • 1 cup mini marshmallows (or cut regular size marshmallows into small pieces)
  • 1 cup Malteasers
  • 200g milk chocolate (or dark chocolate, if you prefer a richer flavour)
  • 100g unsalted butter
  • 3 tbsp maple syrup

Optional Topping:

  • 100g melted white or milk chocolate (I used milk chocolate)
  • 1 tsp coconut oil or butter
  • Extra Malteasers, crushed or whole

Instructions

  1. To prepare your tray, line a 9×9-inch square tin with parchment paper or greaseproof paper.
  2. Place your digestive biscuits in a large mixing bowl and crush them gently with a rolling pin, you want a mix of small crumbs and larger chunks for the best texture.
  3. Stir in the mini marshmallows and Malteasers with the digestive biscuits.
  4. Then add the chocolate and butter into a separate heatproof bowl, set the bowl over a pan of hot water (on low heat) or melt in the microwave in 20-second bursts, stirring each time until smooth.
  5. Add the maple syrup and stir until smooth.
  6. Combine the melted chocolate mixture over your biscuit mix and stir until everything is evenly coated and glossy.
  7. Tip the rocky road mixture into your prepared square baking tin. Press it down gently with the back of a spoon or spatula.
  8. Add your toppings (optional). Melt 100g chocolate with 1 tsp coconut oil for a smooth top layer, then scatter extra Malteasers over while still soft.
  9. Refrigerate for at least 2 hours, or until firm. Use a large sharp knife to cut into squares once set.

  • 100 g unsalted butter
  • 3 tbsp maple syrup
  • 25-30 extra malteasers for topping
  • 1 tsp coconut oil or extra butter for melting chocolate for topping

Equipment

  • 1 measuring cups
  • 1 Heat proof bowl for melting chocolate
  • 1 Mixing bowl
  • 1 Rolling Pin or anything you can crush biscuits with
  • 1 weighing scales
  • 1 mixing spoon

Method
