Ingredients

  • 2 cups rolled oats
  • 1/2 cup Biscoff spread
  • 1 tsp vanilla essence
  • 3 tbsp maple syrup
  • 4 dates (blended with 1 tbsp water in a food processor)
  • 100g dark chocolate
  • 1 tsp coconut oil
  • 4 Biscoff biscuits (crushed for topping)

Instructions

  1. Add the dates and 1 tbsp water to a food processor. Blend until smooth.
  2. In a large bowl, combine the rolled oats, Biscoff spread, vanilla essence, maple syrup, and blended dates. Stir until you have a sticky dough.
  3. Roll into 1-inch balls and place on a baking sheet lined with parchment paper. Chill for 15 minutes.
  4. Melt the chocolate – Combine dark chocolate and coconut oil in a heatproof bowl. Stir until smooth.
  5. Dip each ball into the melted chocolate, then sprinkle with crushed Biscoff cookies for that extra taste of Biscoff.
  6. Allow the chocolate to set in a single layer on your tray or pop them in the fridge for 30 minutes.
  7. Transfer to an airtight container and keep in the fridge for up to a week.

Method
