Last night I was thinking about freezer snacks I could make for the whole family to enjoy and I decided to make coconut yoghurt with pistachios, dark chocolate, and a drizzle of honey. Honestly the best part is cracking it into pieces the next day with my kids and husband enjoying it too.

  • ½ cup desiccated coconut
  • 1 tsp vanilla essence
  • 3 tbsp honey (or swap for maple syrup)
  • ½ cup roughly chopped chocolate

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, stir together the coconut yoghurt, desiccated coconut, vanilla essence, and honey until you have a smooth yogurt mixture.
  3. Fold in the chopped chocolate.
  4. Spread the mixture evenly over your prepared pan. It should be around ½–¾ inch thick.
  5. Scatter over your toppings. (Pistachios, chocolate, coconut flakes, or whatever you fancy).
  6. Place the tray in the freezer and leave until firm (at least 3 hours, or overnight).
  7. Once set, break the coconut yoghurt bark into shards or cut into squares.
