Ingredients

  • 3 tbsp butter (plus extra for greasing)
  • 30 medium marshmallows
  • 1 cup Biscoff spread, divided (½ cup for the mixture, ½ cup for topping)
  • 5 cups crispy rice cereal (like rice krispies)
  • 16 Pretzels – for reindeer antlers
  • 8 pairs of candy eyes
  • Red Smarties or M&Ms – for the red nose

Instructions

  1. Spray or butter a round cake pan (with a removable base if you have one) and line the bottom with parchment paper or wax paper for easy removal.
  2. In a large saucepan or safe bowl, melt 3 tbsp butter over medium heat. Add 30 marshmallows and stir until completely melted and smooth.
  3. Melt 1/2 cup of smooth Biscoff spread in a heatproof bowl or jug. I use the microwave and heat in 20 second bursts.
  4. Quickly stir in the melted this melted Biscoff spread while the mixture is still warm. Mix until fully combined into a smooth marshmallow mixture.
  5. Pour in 5 cups crispy rice cereal and stir until every piece is coated evenly. (It helps to use a large pot and a rubber spatula sprayed with a little cooking spray.)
  6. Transfer the mixture into your prepared pan and press down evenly using a buttered spoon or your hands lightly coated in cooking spray.
  7. Melt the remaining ½ cup Biscoff spread (in a microwave-safe bowl in 20-second bursts until smooth). Pour it over the top and spread into an even layer.
  8. Decorate! Once set slightly, slice into 8 wedges. Press pretzels at the top for ears/antlers, a red Smartie nose in the middle, and stick on candy eyes with a dab of melted chocolate.
  9. Allow the reindeer rice krispies to firm up at room temperature before serving. If you need to set it fast, pop it in the fridge for about an hour!

Tips & Storage

  • Work quickly! The marshmallow mixture sets fast, so have your crispy rice cereal ready to go.
  • Don’t press too firmly into the pan, gently press to keep them soft and chewy.
