Line a baking tray with parchment paper
In a large bowl, stir together the coconut yoghurt, desiccated coconut, vanilla essence, and honey until you have a smooth yogurt mixture
Fold in the chopped chocolate
Spread the mixture evenly over your prepared pan. It should be around ½–¾ inch thick
Scatter over your toppings. Pistachios, chocolate, coconut flakes, or whatever you fancy
Place the tray in the freezer and leave until firm (at least 3 hours, or overnight)
Once set, break into shards or cut into squares
