Coconut Yoghurt Bark

This frozen coconut yogurt bark is creamy, crunchy, and perfectly sweet, I decided to make coconut yoghurt with pistachios, dark chocolate, and a drizzle of honey. Enjoy!

Ingredients
  

  • 2 cups coconut yoghurt any full fat yoghurt works well
  • 3 tbsp honey use maple syrup if vegan
  • 1 tsp vanilla essence
  • 1/2 cup roughly chopped chocolate or use chocolate chips
  • 1 handful pistachios or nuts of choice

Equipment

  • 1 Mixing bowl
  • 1 spatula
  • 1 measuring cups
  • 1 knife if using roughly chopped chocolate
  • parchment paper
  • 1 baking tray

Method
 

  1. Line a baking tray with parchment paper
  2. In a large bowl, stir together the coconut yoghurt, desiccated coconut, vanilla essence, and honey until you have a smooth yogurt mixture
  3. Fold in the chopped chocolate
  4. Spread the mixture evenly over your prepared pan. It should be around ½–¾ inch thick
  5. Scatter over your toppings. Pistachios, chocolate, coconut flakes, or whatever you fancy
  6. Place the tray in the freezer and leave until firm (at least 3 hours, or overnight)
  7. Once set, break into shards or cut into squares
