I have found the perfect way to use up all those half-opened tubs of chocolates and create a fun, no-bake treat that everyone will love.
This Leftover Christmas Cadbury’s Heroes Rocky Road is packed with creamy milk chocolate, crunchy digestive biscuits, and soft mini marshmallows. You could take it to a New Year’s Eve party, gift it or even just a fun activity to do with the kids over the holidays.

- 10 digestive biscuits, crushed
- 1 cup mini marshmallows
- Around 10–14 Cadbury’s Heroes or whatever’s left! (leave some for decoration)
- 3 tbsp maple syrup
- 200g milk chocolate
- 100g butter
- 100g milk or dark chocolate for topping

Instructions
- Line a baking tin with parchment paper. A square tin works best for even slices (I usually use 9×9)
- Crush the biscuits in a large bowl with a rolling pin or pop the digestive biscuits into a freezer bag and use a rolling pin to break them into small chunks. Don’t crush them too fine as you will want some texture to your rocky road!
- Melt the chocolate in a large saucepan or glass bowl that fits snugly over a pot of simmering water (a double boiler setup). Gently melt the 200g milk chocolate and 100g butter. When it has melted add the 3 tbsp maple syrup ans stir until smooth and glossy. You can also use a microwave and stir every 20-30 seconds until smooth.
- Remove from the heat and let it cool slightly (so your marshmallows don’t melt completely). Stir in the digestive biscuits, mini marshmallows, and chopped Cadbury’s Heroes until everything is coated in that creamy Cadbury milk chocolate mixture.
- Spoon the rocky road mixture into your lined tin and press it down gently into an even layer.
- If you are adding the topping, melt the remaining 100g chocolate (milk or dark, depending on your taste). Pour it over the top and spread evenly with a spatula. Press a few extra Heroes into the top for decoration.
- Chill and set by popping the tin into the fridge for at least 2–3 hours or until firm. Slice into squares and serve.
