Ingredients

  • 1.5 cups oats
  • 1/2 cup coco powder
  • 1 tsp vanilla essence
  • 3 tbsp maple syrup
  • 1/4 cup nutella
  • 5 pitted dates
  • 1 tsp coconut oil for melting chocolate
  • 1 cup chopped milk chocolate for dipping
  • 8 squares dark chocolate for decor drizzle

Equipment

  • 1 food processor
  • 1 Mixing bowl
  • 1 measuring cups
  • 1 glass jug/bowl for melting chocolate

Method

  1. Blend the dry mix by adding the oats and cocoa powder into a bowl and mix together
  2. Soak 5 dates in some boiling water for about 10 minutes and blend in a food processor. Make sure dates are pitted
  3. Add the 'wet ingredients' into a separate bowl by pouring in maple syrup, Nutella, dates and vanilla extract and stir until combined.
  4. Mix together with the oats and coco powder until the dough sticks together like brownie mix
  5. Check the texture, it should be perfect to shape into balls. It should be sticky enough to roll but not wet. If it feels a little dry, add some more Nutella or maple syrup
  6. Roll into 12 equal balls and place on a tray lined with parchment paper or a wooden board if presenting them like mine
  7. Melt around 1 cup of Milk chocolate with coconut oil in the microwave and mix every 30 seconds until smooth
  8. Dip each ball and cover with the melted milk chocolate
  9. Pop in the fridge to set
  10. Whilst the balls are setting, melt the 8 squares of dark chocolate in the same way as above and drizzle the chocolate over the set balls
  11. Refrigerate again for 20–30 minutes, then transfer to an airtight container
