No-Bake Halloween Rocky Road Bars (Coffin Treats)

Rich, chewy, and packed with biscuits and marshmallows. This rocky road bars recipe is a spooky Halloween twist on a classic no-bake dessert.

Ingredients
  

  • 7 whole digestive biscuits
  • 5 whole oreo biscuits
  • 1 cup mini marshmallows
  • 200 g milk chocolate
  • 100 g butter
  • 3 tbsp maple syrup
  • 100 g dark or milk chocolate extra for a smooth coffin top

Equipment

  • 1 Mixing bowl microwave safe
  • 1 baking tray
  • 1 weighing scales
  • 1 measuring cups

Method
 

  1. Place the digestive biscuits and Oreos into a bowl and crush them gently with a rolling pin, leave a few larger chunks for texture
  2. In a large bowl, mix the crushed biscuits with the mini marshmallows. Set aside
  3. Add the milk chocolate and butter to a microwave safe bowl and heat in 20 second bursts (or a small saucepan over low heat). Stir until melted and smooth
  4. Pour the melted chocolate mixture over the biscuit mixture and stir until fully coated
  5. Line a prepared pan or baking tray with parchment paper or wax paper. Press the rocky road mixture evenly into the bottom of the pan
  6. Place in the fridge for around 1 hour until set
  7. Melt some dark chocolate and spread it evenly across the top for a sleek finish (the darker the chocolate, the spookier it looks!)
  8. Refrigerate again and once set, use a coffin-shaped cookie cutter to cut out each bar
  9. Decorate with icing crosses or a drizzle of white chocolate for that graveyard effect
