- In a large bowl, combine oats, vanilla protein powder, cashew butter, maple syrup, vanilla essence, and milk
- Stir until a sticky dough forms
- Fold in ½ cup of white chocolate chips
- Roll the mixture into bite-sized energy balls
- Place on a baking sheet lined with parchment paper or wooden board
- Melt the roughly chopped white chocolate chips in the microwave or over a double boiler (add 1tsp of coconut oil for a smoother coating)
- Dip or drizzle over the protein balls until coated
- Refrigerate for 30 minutes until firm
