White Chocolate Protein Balls

These white chocolate protein balls are packed with vanilla protein powder, rolled oats, cashew butter, and sweet white chocolate chips. These energy balls are the perfect balance between a workout snack and a treat for your sweet tooth.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup vanilla protein
  • 1/4 cup cashew butter or coconut cashew butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1/2 cup white chocolate chips or roughly chopped
  • 3 tbsp milk of choice
  • 1 cup roughly chopped white chocolate for coating

Equipment

  • 1 Mixing bowl
  • 1 measuring cups

Method
 

  1. In a large bowl, combine oats, vanilla protein powder, cashew butter, maple syrup, vanilla essence, and milk
  2. Stir until a sticky dough forms
  3. Fold in ½ cup of white chocolate chips
  4. Roll the mixture into bite-sized energy balls
  5. Place on a baking sheet lined with parchment paper or wooden board
  6. Melt the roughly chopped white chocolate chips in the microwave or over a double boiler (add 1tsp of coconut oil for a smoother coating)
  7. Dip or drizzle over the protein balls until coated
  8. Refrigerate for 30 minutes until firm
