  • 1 cup natural peanut butter smooth or crunchy works
  • 3 tbsp maple syrup
  • 1/2 cup chocolate chips I use dark
  • 1 tsp coconut oil extra virgin (if using to melt chocolate)

Equipment

  • 1 Mixing bowl
  • 1 measuring cups
  • 1 jug/bowl to melt chocolate for topping (optional)

Method

  1. In a large bowl, combine the oats, peanut butter, maple syrup, and chocolate chips
  2. Stir until well mixed
  3. Roll the mixture into bite-sized balls (If the mixture feels too sticky, pop it in the fridge for 10–15 minutes to firm up)
  4. If the mixture is not sticky enough you can add some extra nut butter or maple syrup or even better soak 4 dates in boiling water for a few minutes and blend in a food processor then add into the mixing bowl
  5. Place the balls on a tray lined with baking paper or a wooden board
  6. Drizzle with melted chocolate if desired, then chill in the fridge for 20 minutes to set
  7. To melt chocolate, add desired amount into a bowl and add 1 tsp of coconut oil and melt in the microwave, check chocolate every 30 seconds and stir
