M&M Rocky Road

This Rocky Road is packed with crunchy biscuit pieces, soft marshmallows, and pops of bright M&Ms, it’s the kind of no-bake slice that instantly puts a smile on your face.

Ingredients
  

  • 12 whole digestive biscuits
  • 1 cup mini marshmallows
  • 1/2 cup m&ms
  • 200 g milk chocolate
  • 100 g butter I use salted
  • 3 tbsp maple syrup
  • 100 g milk chocolate for the top
  • 1/2 cup m&ms for the top

Equipment

  • 1 mixing large bowl
  • 1 smaller bowl microwave safe
  • 1 measuring cups
  • 1 double boiler or microwave
  • 1 square baking pan I use 9x9
  • 1 sheet of baking paper

Method
 

  1. Line a square tin with parchment.
  2. Crush digestives using a freezer bag and rolling pin in a large mixing bowl.
  3. Add mini marshmallows and m&ms to the crushed biscuits.
  4. Melt chocolate and butter in a double boiler or melt in the microwave in 30 second bursts.
  5. Stir until combined and add maple syrup. Stir until smooth and glossy.
  6. Pour over the top of the biscuit mixture until ingredients are fully covered.
  7. Press mixture into the tin.
  8. Refrigerate 2–3 hours, slice and enjoy.
