Method
- Add the rolled oats to a food processor and blend until they form a fine oat flour texture
- Add the protein powder and oats to a bowl and combine
- Soak the dates in a jug with 100 mls boiling water for around 10 minutes. Then blend together (I use a nutri bullet)
- Then add the peanut butter, maple syrup, vanilla extract and blended dates into a bowl and combine
- Add with the oats and protein powder mix until everything starts to come together into a sticky dough
- If it’s too dry, add a splash of water or an extra spoon of nut butter to reach the right consistency
- Scoop small portions and roll into bite-sized balls using your hands
- Melt dark chocolate on low heat double boiler or add to a microwave safe bowl and melt in 30 second bursts. I like to add 1 tsp of butter to melt with the chocolate
- Cover each ball with dark chocolate and add a pinch of flakey sea salt
- Pop in the fridge for about an hour to set
