Chocolate Protein Balls with Peanut Butter

Easy no-bake chocolate protein balls made with peanut butter, dates, and chocolate protein powder. High in protein, full of flavour, and ready in minutes. These really are the perfect healthy snack for busy days.

Ingredients
  

  • 1/2 cup rolled oats approx 57g
  • 2 scoops chocolate protein powder
  • 1 cup smooth peanut butter
  • 1 tsp vanilla essence
  • 4 tbsp maple syrup
  • 5 pitted medjool dates
  • 100 g dark chocolate
  • 1 pinch flakey sea salt

Equipment

  • 1 food processor
  • 1 large mixing bowl
  • 1 smaller mixing bowl heatproof for melting chocolate
  • 1 mixing spoon
  • 1 parchment paper

Method
 

  1. Add the rolled oats to a food processor and blend until they form a fine oat flour texture
  2. Add the protein powder and oats to a bowl and combine
  3. Soak the dates in a jug with 100 mls boiling water for around 10 minutes. Then blend together (I use a nutri bullet)
  4. Then add the peanut butter, maple syrup, vanilla extract and blended dates into a bowl and combine
  5. Add with the oats and protein powder mix until everything starts to come together into a sticky dough
  6. If it’s too dry, add a splash of water or an extra spoon of nut butter to reach the right consistency
  7. Scoop small portions and roll into bite-sized balls using your hands
  8. Melt dark chocolate on low heat double boiler or add to a microwave safe bowl and melt in 30 second bursts. I like to add 1 tsp of butter to melt with the chocolate
  9. Cover each ball with dark chocolate and add a pinch of flakey sea salt
  10. Pop in the fridge for about an hour to set
