Chocolate Orange Rocky Road

This Chocolate Orange Rocky Road is the easiest no-bake treat! Made with milk chocolate, crushed biscuits, mini marshmallows, and Terry’s Chocolate Orange for the perfect festive crunch.

Ingredients
  

  • 200 g milk chocolate
  • 100 g butter I use salted
  • 3 tbsp maple syrup
  • 10 whole digestive biscuits to be crushed
  • 1 cup mini marshmallows
  • 1 whole chocolate orange
  • 150 g milk chocolate optional for topping

Equipment

  • 1 square baking tin I use 9x9
  • 1 large mixing bowl
  • 1 smaller heatproof bowl
  • 1 microwave/pan for double boiler
  • 1 mixing spoon
  • 1 Rolling Pin to crush biscuits
  • 1 measuring cups
  • 1 weighing scales

Method
 

  1. In a large mixing bowl, crush your digestives with a rolling pin. Leave some bigger chunks for that typical rocky road feel
  2. Add the marshmallows and Terry’s Chocolate Orange wedges together with the biscuits
  3. Then add the milk chocolate and unsalted butter to a smaller separate heatproof bowl. Place it over a large saucepan of simmering water (a simple double boiler) and melt slowly until smooth. Alternatively, use a microwave and stir every 20-30 seconds until melted
  4. Pour the chocolate mixture over the biscuit mix and fold everything together until coated
  5. Line a square tin or traybake tin with parchment paper and press the mixture in firmly
  6. Optional-melt another 150g milk chocolate and pour over the top. Top with more chopped Terry’s wedges for the best things finish
  7. Leave in the fridge for 2–3 hours, or in a dry place overnight, until set
  8. Cut into squares with a sharp knife and serve

Store in an airtight container at room temperature or in the fridge. It keeps for up to 1 week.
