Blueberry Hummus

This rich and creamy blueberry hummus is healthy, full of antioxidants and easy to make. It is a delicious twist on the classic hummus recipe.

Ingredients
  

  • 1 can chickpeas drained
  • 1 tbsp cumin ground
  • 1/4 cup tahini
  • 1 clove garlic crushed
  • 2 tbsp olive oil extra virgin
  • 1 juice lemon
  • 1/2 cup frozen blueberries can also use fresh
  • 1/4 cup cold water more if needed
  • 1 pinch salt more to taste

Equipment

  • 1 food processor blend until smooth
  • 1 garlic press or sharp knife
  • 1 measuring cups

Method
 

  1. In a food processor, combine all of the ingredients.
  2. Blend for 1–2 minutes, scraping down the sides as needed.
  3. Add more cold water one tablespoon at a time until you reach your desired creamy consistency.
  4. Spoon into a serving bowl and garnish with fresh blueberries and a drizzle of olive oil.

Transfer to an airtight container for maximum freshness. Keep in the fridge for up to 3-4 days.
